The raw material for this tea is harvested from wild tea trees aged 300-500 years, growing in a state forest on the slopes of Mount Ailao. Local villagers receive permission from the government to collect leaves from these trees, but unfortunately, not every year. However, this spring everything aligned perfectly. The harvest is always very limited. This time, only 24 kg of tea was produced. Master Wang uses this raw material exclusively to make Shai Hong teas. He says that this is the best combination. Shai Hong teas are made using a special technique, where the main difference is that the fixation (fermentation stoppage) occurs not in an oven (the usual method), but in the sun (Shai Qing).
The warmed leaf entices with a sweet and sour aroma of strawberry jam, cornelian cherry, and tones of aged oak and dried herbs. The bright, clear, mineral, and wild flavor again recalls strawberry jam, dry fireweed leaves, honey, candied orange peel, and fig. With each infusion, the finish unfolds into a powerful kumquat bittersweet celebration that spreads across the root of the tongue and the deep palate. The thick, cognac-colored liquor with every subsequent pour feels like setting off on a journey into the forest.
This shaihong powerfully warms and fills with its wild natural energy, as if the wild forest is sharing its healing nectar with you.
